1 cup uncooked millet½ cup soy milk powder5 ½ cups hot water⅔ cup chopped dates½ cup flaked coconut1 teaspoon vanilla extract
Directions

Preheat oven to 350 degrees F (175 degrees C).Combine millet, soy milk powder, hot water, chopped dates, coconut, and vanilla in a 9x13 inch casserole dish.Bake casserole in preheated oven for 30 minutes, then remove and stir. Return casserole to oven and bake an additional 30 minutes. Serve hot.
