2 cups water1 tablespoon olive oil½ teaspoon salt1 (10 ounce) box couscous1 (13.75 ounce) can artichoke hearts, drained, finely chopped1 large tomato, cut into small dice⅓ cup chopped fresh parsley⅓ cup crumbled feta cheese1 tablespoon fresh lemon juiceground black pepper to taste
Directions

Bring the water, olive oil, and salt to a boil in a saucepan. Pour in the couscous, cover, and immediately remove from heat. Let sit covered 5 minutes. Fluff with a fork. Stir in the, artichoke hearts, tomato, parsley, feta cheese, and lemon juice. Season with black pepper.
