6 cucumbers, diced4 roma (plum) tomatoes, seeded and diced5 green onions, sliced1 red bell pepper, seeded and diced⅓ cup chopped garlic1 cup chopped fresh parsley½ cup minced fresh mint leaves½ cup olive oil2 tablespoons fresh lemon juice1 tablespoon salt1 tablespoon ground black pepper
Directions
