1 ½ pounds unpeeled potatoes, cut into 1-inch chunks2 tablespoons olive oil1 teaspoon kosher salt¼ teaspoon black pepper½ cup grated Parmesan cheese¼ teaspoon dried thyme leaves
Directions

Preheat an oven to 400 degrees F (200 degrees C).Place the potatoes into a mixing bowl, and drizzle with olive oil. Sprinkle with kosher salt, black pepper, Parmesan cheese, and thyme leaves. Toss to evenly coat, and transfer to a 9x13-inch baking dish.Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork, about 1 hour. Serve hot or at room temperature.
