8 cups cubed seeded watermelon1 bunch fresh cilantro, chopped½ large white onion, chopped2 large jalapeno peppers - stemmed, seeded and minced2 cloves garlic, minced1 cup white wine vinegar1 teaspoon salt
Directions

Stir the watermelon, cilantro, onion, jalapeno peppers, garlic, vinegar, and salt together in a bowl until evenly mixed. Cover, and refrigerate overnight for best flavor.
